What is kombucha?

Kombucha (not to be confused with the Japanese konbucha, which is made from dried seaweed), is fermented tea that is lightly effervescent and produced by using a SCOBY.  The fermentation process produces enzymes, amino acids, vitamin C, B vitamins and probiotics.
